5-minute Mug Frittata


We’re in LOVE with this super fast, single portion breakfast recipe. We modified to fit Whole 30, and it was delicious! Feel free to mix and match your veggies.

TMF 5-minute Mug Frittata


1 mug (bowl shaped works better if you have it)
2 eggs
1/4 cup almond or coconut milk
1/4 cup spinach – chopped
1/4 cup onion – chopped
1 shiitake mushroom – diced
1 small garden tomato – diced
1 small sweet pepper – seeded and diced (or jalapeño to add some spice!)
Salt and pepper to taste


Cut up your veggies and throw in the mug.
In a separate bowl, whisk together eggs and milk. Pour over veggies. Add salt and pepper.Microwave for 3-3.5 minutes depending on how done you like your eggs.
Enjoy while hot!
