Berry Banana Breakfast Quiche


Here’s a great recipe we found and modified to fit Whole 30. Pair it with some fruit, and you’ve got a quick and yummy breakfast!

Berry Banana Breakfast Quiche


4 eggs
2 bananas
1 cup raspberries (or blueberries)
1 tablespoon ghee


Preheat the oven to 400°F (200°C).

In a batter bowl, mash up bananas with a fork until all the major lumps are gone. Whisk in eggs.

Grease a muffin pan (or tart pans) with melted ghee. Put 5-8 berries in each cup depending on its size.

Pour egg mixture into cups until all the berries are covered (about 3/4 full).

Bake for 12 minutes. Refrigerate leftovers.
