Grilled Salmon with Spicy Thai Avocado Sauce

Grilled Salmon with Spicy Thai Avocado Sauce

GRILLED SALMON INGREDIENTS:

2 lbs salmon, cut into 4 pieces
1 tbs olive oil (I used Thai Infused Chili Olive Oil for an extra kick)
1 tsp salt
1 tsp black pepper
1/2 tsp chili powder
1 tsp smoked paprika powder
1 tsp ground cumin
1 tsp onion powder

 

DIRECTIONS:

Mix the salt,  smoked paprika, chili powder, cumin, onion powder and black pepper together.  Rub the salmon fillets with olive oil then add the seasoning mix. Refrigerate for at least 30 minutes. Pre-heat the grill. Grill to desire.

SPICY THAI AVOCADO SAUCE INGREDIENTS:

2 ripe avocados, scooped and cubed
2 garlic cloves, minced
1 lemon, juiced
1 jalapeno, stem and seeds removed for less heat (I like it with some heat so I leave it)
1/4 cup fresh cilantro
1 tsp apple cider vinegar
1/2 tsp ground chipotle pepper
3 tbsp olive oil
1/4 cup water
salt and pepper to taste

DIRECTIONS:

Place all ingredients, except olive oil and water, in a blender and mix. Once combined, slowly add the oil. Gradually add the water until your desired consistency is reached. Season to taste with salt and pepper.
